As already pointed out in introduction, the dairy sector is of great economic importance in the province of Cuneo: over 4.5 million litres of milk are produced annually, approximately 50% of the amount produced in Piedmont , and most of which is processed into cheese, according to a long and consolidated tradition. This tradition gives origin to a great number of important cheeses. In fact, there are as many as seven cheeses that can boast the PDO seal. Four of these can be produced exclusively in the province of Cuneo: Bra, Castelmagno, Murazzano, Raschera, whereas the Piedmontese Toma can be produced almost everywhere in the Piedmont Region, and Grana Padano (cow’s milk cheese) and Gorgonzola also in other regions of Northern Italy . Furthermore, the procedure for PDO acknowledgement is in course for the Toumin dal Mel.
As well as these, all the cheeses indicated on the list of Traditional Food Farming Products of the Piedmont Region also deserve to be mentioned, as they are produced exclusively or mainly in the areas of the province and are tied to local traditions of the past. Among these, there are: Boves and Gioda, Nostrale d’Alpe, Paglierina, Robiola d’Alba, Sola and Testun, Tuma of Bossolasco, Toma d’Elva and Toma of Celle Macra, Tomini of the Saluzzo Valleys, Tomino del Bot and Tomino of S.Giacomo di Boves, Brus.
